Dr. Sofia “SoJo” Coffran spent her career studying theoretical physics, chemistry, electrical engineering, and language before a sudden change in research funding pushed her toward an unexpected second act.
Drawing on childhood memories of cooking with her father and a scientist's obsession with precision, she opened SoJo's Ramen in historic downtown Denver. Every bowl is a study in heat, pressure, timing, texture, and balance.
Around here, recipes are treated like equations. The result is ramen that feels familiar, comforting, and somehow impossible to forget.
Located in a restored brick corner building in historic downtown Denver, SoJo's is intimate, precise, and usually booked. Walk-ins are welcome when available. Reservations strongly recommended.
